Jamon Iberico is one of the most exclusive and expensive types of ham, made from Iberico pigs that are fed exclusively on acorns (bellota) during the final months of their life. The free-range lifestyle on vast pastures and unique diet give the meat its distinctive texture, rich flavor, and characteristic nutty aroma. After slaughter, the meat is carefully cured for up to 36 months or more, resulting in exceptional tenderness and depth of flavor. Iberico Bellota ham is available in different grades, such as 100% Iberico (from purebred pigs) and 50% Iberico (from mixed-breed pigs), with the 100% version offering the most intense flavor and marbling.
